Paella is a tradition in Puerto Vallarta steming from Spanish roots. The locals informed us that many families in Puerto Vallarta have their own coveted paella recipes that are featured at the Sunday family gathering. Trio's chefs continue this tradition. Their version of paella is special and memorable, a perfect blend of saffron, fish, broth, and rice ... que sabrosa! When my son looked at the menu he said, "What am I going to eat?" Finally, he decided to order spinach ravioli. To my surprise, he ate all of it. However, most children will not find their comfort foods here. Trio's menu constantly changes to take advantage of the variety of fresh fruits, vegetables, and fish abundant in this breadbasket area of Mexico. The setting is also very pleasant and relaxing, and the service very attentive. I believe most adults will love this restaurant particularly those favoring fresh fish delicately dressed with exquisite sauces.
