Food that you should try in China

Hi everyone,

I'm travelling to China soon, in two weeks, and I heard people say Chinese people eat weird food. Well I'm quite open-minded and I like good food, so I would like to know what kind of dish I should definitely try overthere, please don't include cats and dogs in your answers. But all the rest I'm listening.
