Tiber Hostel and Camping is by far the best hostel experience I've had. Although it's actually located outside of Rome (approx. 15 minutes via public transport), it offers you sights you wouldn't notice if you stuck to the beaten paths. The commuter trains cut through gypsy villages and half-finished excavations. You'll speak to locals and notice regulars. It's quite easy to find and very punctual. The staff at Tiber is exceptional. They're young and have come together from all parts of the globe. Travis (Aussie) and Paul (English) were our personal favorites.
The restaurant and bar helps you to enjoy traditional Italian cuisine like gnocchi with fresh mozzerella for about 7 euros/person, so you can save the rest of your money for more important things. Tiber's store has everything you'll need for a day in the city at prices you won't find anywhere else (1 euro for a bottle of water; in the city, it's usually 2-2.50). This budget accommodation doesn't take anything away from your experience -- in fact, it will add some flavor and excellent stories!
